Thanks for the help though. one possibility is clutter, when there's not enough stockpile space so food items get left in the kitchen where they rot (food does not rot in stockpiles). the other possibility is slow/unskilled chef, who is taking too damn long cooking.

Think of miasma as a rotten smell and not a virus. Dwarfs just get bad thoughts when they pass through the smell. This could be temporary (short term memory) or a long term stress factor (if the short term memory gets committed to long term.)Miasma punishes you for "bad management" which is completely fucked as it's almost impossible to tell a dwarf to do a specific hauling task. In fact it is often the fault of the dwarf that the miasma exists in the first place, as they went for a drink in the middle of hauling perishables.
