Our windshield is full of chips after 5 years and the only time eyesight shutsdown is heavy rain, fog, or glare. This is why you shouldn't rain-x the ascent. It causes glare for the cameras. It's worked as designed, and the safety features rarely assert themselves. When they do, it's as often a welcome reminder that I'm pushing my luck as it is an annoyance. The ECU will start relearn once the battery is connected and the car is started. Just be aware that throttle response might be down a little until it relearns all of it's parameters. End result, the sensors in the back needed to be replaced. It hasn't happened since. 2016 Outback 3.6R + Eyesight + Nav + Moon Roof.

You can always buy an older generation that didn't have Eyesight, but no, I highly doubt you can completely disable/remove Eyesight from your Subaru. It's integrated into "nearly everything".
