There is an icon in the upper right corner of the screen while the person who did the imprinting is mounted on the animal. While mounted, press and hold H (default key) and the icon will show the buff in percentage for the person that did the imprinting. For a 100% imprint, the buff will be 30% more damage & 30% more resistance.

You can set the imprint quality on any tame, hatched or wild-caught. you can set the imprint quality on any age. I'm not actually sure on this. I would assume that if the hatchling were imprinted to a rider, it would get whatever bonus was given. But I'm not sure one way or another if you get that extra bonus without being the one to imprint it.
