Hi, I am about done repairing my tip and plan to cut a new edge on my leek. The leek uses 440A and has a full hollow grind. Seeing as this is a soft steel with a narrow blade, i dont want anything too weak. I am debating between a 30* (i am fairly sure this is too much for 440a), a double bevel 30/40, 40, and a double bevel 40/50.
